Brown, who has been head chef at the Michelin-starred restaurant at The Capital hotel in Knightsbridge for the past two years, will hand over the reins to the restaurant’s current sous chef, Andrew Sawyer.
He has chosen Hackney Wick, in east London, as the location for his debut solo venture, which is due to open early next year.
“There is no doubt Tom will continue to flourish,” says Nathan Outlaw, who will continue to support Brown in his new project. “I can only wish him well in his new role.”
Brown describes his departure as the “end of an era” in an Instagram post, and thanks Outlaw, The Capital hotel and the Levins, the family that owns the hotel.
“I have loved every minute of my time working at The Capital, and it has been a huge honour to start my career in London at The Capital Hotel and work alongside The Levin family” says the chef.
“It has always been my dream to open my own restaurant and it just feels now that the time is right for me to branch out and pursue my own venture.”
